Fresh ginger that has been dried before being utilised is referred to as dried ginger. After soaking the fresh rhizomes in water overnight, the outer peel is gently peeled with a knife or a peeler. They have then cleaned again and sun-dried for about a week on mats or grills.


Ginger may be collected approximately 5 months after planting, however, they are immature at this point. The rhizomes will grow less delicate and the flavour will be too intense after 7 months. The best time to collect ripe rhizomes for drying is between 8 and 9 months of maturity when they have a strong scent and flavour. The fibre content will be too high if they are picked later.
