Sun-dried green beans are only stored in India's west coast, on the Malabar coast, where the beans swell, fade, and lose acidity due to purposeful exposure to sea air and monsoon winds.Our Monsooned Malabar AA is an Arabica that has been exposed to the humid air of South India's west coast. It's kept in specialised warehouses.


The monsoon winds swell the coffee beans, causing them to expand and develop a musty flavour. The beans become yellow, lose their acidity, and become syrupy as a result of this procedure. They are agitated now and then to ensure that they are continually exposed to the wetness of the environment.


The coffee beans are carefully placed in sacks, then kept with sufficient room between them to allow the monsoon winds to pass through.
